I don’t often use meatless meat. Beyond Meat Grilled Chicken - Free Strips are an exception and taste fantastic. Whole Foods carries this and also offers a few other flavors. Beyond Meat Grilled Chicken is one of the few brands I think has a great straight from the grill, smoky taste. If you are exploring a vegan or vegetarian foods meatless meats can be a good transition tool but it is not recommended to eat large amounts of processed soy. The key to trying meatless meat is not expecting it to taste like meat. If you try it just as it is not expecting real meat I think you will really enjoy it.

Cauliflower Steaks
Weeknight dinners can be a big deal for me since I try to cook for the blog. Some nights it is really nice to take it easy. Cauliflower steaks are an easy and beautiful dish. I can have a cauliflower steak and a salad and be a happy camper. This can also be a starter for a dinner party that is sure to amaze your guests. The caramelized edges are almost sweet and give fresh cauliflower a rich flavor that steaming will never achieve.
Coffee & Cinnamon
We have been two frozen
pineapples in the snowy northeast since we made the trip from Hawaii. Coffee
has become even more important to warm up in the morning. I always put cinnamon on
my coffee but it seems even more appropriate now that winter and the holiday
season is here.
Pumpkin Carrot Soup - a winter dinner
My sister’s Christmas
card this year included a recipe for Hot Toddies. Sean and I always love a good
cocktail so Hot Toddies it was for cocktail hour. It also inspired a warm
winter dinner. The refrigerator is almost completely empty after Thanksgiving
and not quite time to buy for Christmas yet. This soup is a product of what was
in the house and the desire for something warm.
It is rare that we get
rainy days in Hawaii where it is pouring all day and the temperature stays in
the low 70s. Today was one of those days. Living in Hawaii makes you appreciate
rainy days in a new way. When the sun is shining it’s hard to stay inside and
clean, cook or organize your gadget drawer. (I know we’ve got it so hard don’t
we...)
Muesli in a Hong Kong Cafe
We settled into a cozy
love seat and took a deep breath while enjoying the much-welcomed air
conditioning. My husband and I had finally stumbled upon a very British cafe
called the Brunch Club in Hong Kong on a hot and muggy
summer morning. We had set out that morning for a casual breakfast but it had
turned into a bit of a hike through the Mid-Level stairs of Hong Kong’s Central
district. Our rudimentary tourist maps and the densely populated streets made
it challenging to find this wonderful hole in the wall cafe.
Panzanella
I can’t think of a better
drink on a hot day than a chilled glass of dry French rose wine. Panzanella is
a perfect accompaniment to Rose for a light lunch. Yes, I occasionally think of
what I want to drink first and then pair the food. For those of you that are
trying to stay warm in the cold of winter this will transport you to a sunny
deck on a warm spring day.Roasted Vegetable Couscous and the Singapore Wet Market

It was my second trip to exotic Singapore that I discovered a new market. When my dear friend Emily asked if I wanted to go the “Wet Market,” I envisioned tanks full of fish and creatures from the sea but it was so much more.

Tomato Benedict
Tomato Benedict
It was a sleepy morning
at the river cabin. I shuffled upstairs to the kitchen and as I filled my
coffee cup, I watched my father-in-law make his breakfast. He was sprinkling
balsamic vinegar on a toasted English muffin. He spread mayonnaise into the
nooks and crannies and then topped it off with a thick slice of red summer
tomato on each half. He asked if I wanted the same for breakfast and I said yes
in a heartbeat. I had just discovered my new favorite breakfast. I often
accompany this with avocado on toast if I have one around.
The creamy mayonnaise is
a distant nod to hollandaise sauce
