The bartender wipes his brow after vigorously shaking the tequila concoction I have just ordered. He pours the ruby liquid into a margarita glass with a well-salted rim. Garnished with a grapefruit slice it is just what I need after a long day walking in the concrete jungle of New York City. Bobby Flay’s Mesa Grill has an extensive list of tantalizing fruit and tequila mixtures. I was so taken by this cocktail I tried to replicate it the next night at home. This is my interpretation of Mr. Flay’s masterpiece. I like to garnish it with pomegranate seeds that settle to the bottom. The tequila soaked gems are the perfect ending to this non traditional margarita. I think this would be excellent with nachos for your Super Bowl party.
Grapefruit Margaritas
Makes 2 cocktails
1 large ruby red grapefruit
2 limes
3 oz tequila
2 oz Grand Marnier or orange liqueur
Agave nectar to taste
Kosher salt
Juice the grapefruit and limes and remove any seeds. Salt rim of margarita glass. Place juice and remaining ingredients into a larger shaker filled with ice. Shake vigorously for about 1 minute. Strain and pour into salted margarita glass. Enjoy!
Multiply recipe as necessary for a pitcher.
